Quick, eassy and 10 times better than anything
you can buy in a shop!
Ingredients
Guacamole
1 small red onion
2 Avocados
1 Lime
1 Plum tomato
Salt & Pepper
2 tbsp Extra virgin olive oil
Bunch of coriander
1 garlic clove
1 Red chili
Salsa
1 pack of baby tomatoes
Bunch of coriander
1 Lemon
1 Lime
1 garlic clove
1 small red onion
2 red chilies
Salt and Pepper
Method
1. For the Guacamole: Finely slice your red
onion, tomato, chili and coriander and place in a bowl
2. Grate your garlic clove into the bowl (this is
better than chopping as its much finer and stops one person getting a big lump
of garlic)
3. Scoop out 2 avocados and add to the bowl along
with the juice of 1 lime, extra virgin olive oil and some salt and pepper.
4. Mash up using a fork, keeping a few avocado
lumps in for the texture but make sure all ingredients are thoroughly mixed.
5. For the salsa: Finely chop baby tomatoes, red
onion, chilies and coriander.
6. Place in a bowl and grate garlic and also some
lime zest into the bowl.
7. Squeeze juice for lemon and lime over the top,
add salt and pepper and then mix thoroughly.
8. Fab served with fajitas or in your lettuce
salad wraps.
