This is one of my fav’s as it looks so
naughty, tastes so nice but is so healthy!
I am not very good at following recipes
so tend to just make it up as I go along but this is a rough idea of what I did
and used!
Ingredients:
Burger:
Lean mince
Coriander
Red chili
Garlic
1 Egg
Half an onion
Salt and pepper
Butternut squash (for bun)
Slice of cheese of your choice
Salsa:
Mango
Cucumber
Tomato
Coriander
Red chili
Lime juice
Salt and pepper
Salad:
Carrot
Spinach
Olive oil
Salt and pepper
Cold Pressed Rapseed oil - for frying
Extra Virgin Olive oil - for salad and butternut squash
Method:
1. Pre heat your over to 180oC. Slice
and peel your Butternut Squash into burger bun shapes, drizzle with a bit of
olive oil, salt and pepper and then put in the oven to bake. (Depending on size
they will take around 20 minutes.
2. For the burger; finely slice onion,
chili and garlic and sauté until soft.
In a bowl place your mice, coriander, egg and the sautéd bits and mix
thoroughly.
3. Mould your burgers into whatever
size you want, I made mine slightly smaller than the butternut squash so it
fitted in. Using the same pan as you sautéd
in lightly fry your burgers so they are browned on each side. Then place on a tray and put in the oven to
cook through, disgarding any excess fat that has dripped out.
4. For the salsa; finely cube mango,
cucumber, tomato. Finely slice red chilli and coriander and then mix all
together with a squeeze of lime and some salt and pepper.
5. For the salad; using a peeler peel
your carrot into strips and then toss with spinach, olive oil and salt and
pepper.
6. Everything’s ready to go so just
construct everything as in the picture!
