Quinoa Flour Tortilla Base Pizza



Ingredients

Use quinoa flour tortilla recipe from previous post
1 can of chopped tomatoes
2 tbsp Tomato puree
1 clove of garlic
1 red chili
½ red onion
Basil
Salt and pepper
Mozzarella
Toppings of your choice

Method

1. Make the tortilla wraps from previous post but make them slightly thicker than usual.

2. Finely chop chili, garlic, red onion and basil and sauté in a pan with a little extra virgin olive oil.

3. Once soft add can of chopped tomatoes and tomato puree and cook until reduced to thick sauce.


4. Spread tomato sauce over the tortilla, add mozzarella and toppings and then bake for 10 minutes or until cheese has metled.
